
Special K - Chicken Parmesan with Zoodles
Ingredients:
1 lb boneless, skinless chicken breast
2 cups Special K cereal (just the flakes)
2 eggs, beaten
2 TBS parmesan cheese
1 tsp garlic powder
1 tsp onion powder
pinch of salt & pepper
1 - 2 medium zucchini made into zoodles
1 jar of premade tomato sauce
1 cup shredded mozzarella cheese

1) Preheat oven 375 degrees. Spray a baking pan with non-stick cooking spray.
2) Wash zucchini and cut off both ends to make a flat end, make your zoodles and set aside


3) Pour cereal into a Ziploc bag and seal tightly. Let your kids or yourself hammer the flakes until they are small, bead-crumb like pieces. Pour into a bowl and add 2 TBS of parmesan cheese, mix well.

4) Beat two eggs in a bowl and set aside.
5) Cut excess fat off the chicken breast, rinse with water.
6) Cut chicken breast in half lengthwise (optional). Mine were really think, so I cut them in half. Season with salt, pepper, onion powder and garlic powder.

7) Dip the chicken into the egg wash to cover entire piece. Then, place in cereal crumb mix and coat chicken completely. Place in baking pan. Repeat until all chicken is finished.
8) While chicken is baking, heat the tomato sauce on the stove.
9) Bake in oven at 375 degrees for 20 min. Sprinkle chicken with shredded mozzarella cheese and bake another 5 minutes or until cheese is melted.

10) Microwave zoodles in a microwave safe bowl for two minutes.

11) Place zoodles in serving bowl, pour desired amount of tomato sauce and top with a piece of Parmesan chicken. Add extra Parmesan or mozzarella cheese if desired.
