
Southwest Turkey Wraps
Ingredients:
1 lb ground turkey
1 cup cooked rice, any kind you have is perfect
2 1/2 tsp red chili pepper
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 cup bell pepper chopped (I used red)
1/2 cup chopped onion
1 can black beans, drained and rinsed
1 can sweet corn, drained.
1 can Rotel (optional)
shredded Mexican cheese
flour tortillas
sour cream

This meal was originally inspired by a Pinterest recipe I found. I thought it sounded good, so I took what I had in my pantry and threw it together and it actually turned out pretty delicious. At my house, we love anything Mexican, especially my 10 year old. Ask him if he wants a taco and he'll tell you he wants 4. This hit the spot without all the fat and grease of regular Mexican food.
The whole thing is pretty simple to make, however I managed to burn myself while placing the packed tortillas on the skillet to brown. So be careful!! I'm not a cook by any means, my poor pinky and ring finger.

PS. I've included a low carb version as well for all you carb watchers.

Keep fingers away from the hot skillet!
1) In a large skillet, brown the ground turkey. Season with salt and pepper. Drain any excess grease.
2) Add chili powder, cumin, garlic powder and a couple TBS of water and mix together.
3) Add the onion, red bell pepper, corn, and drained black beans (and whatever else you have handy). Let simmer on low while you prepare the rice.


5) Lay out your tortillas and get to filling! I started with rice, then sprinkled cheese, then a scoop of sour cream and a couple spoonfuls of the meat mixture.
Tip: Fill all your tacos first, then you can brown them on the skillet at the same time.
4) Prepare rice according to package. I used instant white rice which took about 5 minutes to cook.


6) Heat a large skillet (I used a griddle) on medium heat and spray with nonstick spray.
7) Fold your burritos up like you're a professional Taco Bell employee (I clearly am not!) and place face down on the warm skillet. Let sit for about 1 min and then flip it over carefully. Brown the other side for 1 min before removing from heat.
8) Serve warm and enjoy! You can serve with a side of salsa, guacamole, or sour cream. If you really want to impress your family or guests, sprinkle with cilantro for a touch of color.


This is my 10 year old who would literally eat tacos all day if I let him. This was take....4, maybe 5 before I gave up on him being a food model! lol...
Needless to say, he devoured these. My hubby loved them as well. I think they'll definitely be on our weekly menu.
Low Carb Option

Want to make it a low carb dinner? Skip the tortilla and pour the turkey mixture over a bed of lettuce of your choice. I had romaine and spinach, so that's what I used. For dressing, I drizzled a generous amount of taco sauce on top. This was filling and very tasty, without the guilt!
