Egg in a hole - Acorn Squash

This is a delicious breakfast or brunch recipe that is super easy to make and doesn't require a lot of ingredients. Everything I used was already in the house. Give it a try and enjoy a healthy alternative to eggs at breakfast. 

1) Start with a whole acorn squash - medium size is good for about 4 servings. Preheat oven 425 degrees.

2) Cut both ends off so the squash doesn't roll around. 

**You can discard or save for a different use.**

3) Cut the squash lengthwise in 1 inch sections.

4) Scoop out the seeds with a spoon so there is a hole all the way through the center of each piece..

5) Spray a baking pan with non-stick spray. Place slices in pan and rub each side down with EVOO. .

6) Sprinkle each side with salt and pepper, and any other spices you want. I used Chili powder and it was delicious.  

7) Once both sides are seasoned, bake at 425 degrees for 25 minutes. This is what it will look like at 25 minutes.  

8) Crack an egg carefully into a measuring cup. Pour the egg into each slice of squash.

**Lower the temperature in the oven to 350 degrees.**.

9) Return to oven and bake 12-15 more minutes. Length of time depends on how you like your eggs. 12 minutes will make them more runny, 15 minutes makes the yolk harder. .

10) Serve hot and enjoy!
